Meet the dynamic young New Zealand-born chef, Monique Fiso, with Michelin-star experience who is championing sophisticated food using Māori cooking techniques and native ingredients.
Over the summer of 2017-18 Monique Fiso worked on the Whanganui River where she continues her research of traditional Māori food and has also started investigating the food of early settlers. She talks to Allyson Gofton.
